Cold Salmon Noodle Salad.
Following Matt's health scare a couple of weeks ago (it's ok; he's fine), there's been more of a focus on eating 'well'.
For him, that's meant lots of salmon. In lots of ways.
Tonight, salmon & noodles. Modified from this recipe, rice noodles tossed with soy sauce, lime juice, sugar, sriracha, mint & toasted sesame seeds, chilled & topped with cucumber & in Matt's case, just-barely cooked salmon.
It was good, but could have used more sauce. Something to remember for next time.
