Seared Beef Tenderloin and Avocado Sandwiches

Now, that's just gorgeous, isn't it? I don't eat meat, and I recognize how fabulous it is!
Matt had this some weeks ago...I'd almost forgotten about it (I have so many things filed under 'draft' in my blogger account, they get lost).
This fairly quick to make sandwich was a hit; quality ingredients combined to make a rather pretty dish.
Which is exactly the way it should be, you know.
