Red Lentil Soup with Curry

Monday's dinner, a slightly sweet and spicy soup.
Onions, garlic, ginger, curry powder, cinnamon, cumin and bay leaves, cooked for a few minutes. To this, add stock (veggie bouillon for us) and red lentils. Bring to a boil, cover, and cook at a low boil till lentils are tender. Add some lemon juice, cilantro (which I intentionally omitted) and chutney. Add some yogurt or sour cream before serving.
It was a nice soup, but as Matt said, it really needs something to go with. Rice, bread...sumthin'.
Still, another not-too involved and fairly healthy dinner. So, no complaining. And that means Me.
But you think it would come out a bit more red, wouldn't you?

Probably some fresh herb in there would have helped too..... Alittle rice or diced potato cooked in with the soup would have made it hearty but with little extra effort?
Clare eats...absolutely. Potatoes or rice would have been perfect...and now that we know, will most likely be added to future attempts!

We are very anit-cilantro in this house, but most certainly...use it.
There's already a link to the recipe...it should appear as green text...the word 'soup'.
mmmm...love curry.I would have thought a darker color,too.Looks great though.

We're big on curry, too...and have a house-made mix in the cupboard for just such a recipe.
I know! The lentils were more orange than red, but I still thought they'd show up more in the soup. So very wrong about that...
Not a problem, Becky...lots of people miss the links, though I can't figure out why...
surely very healthy.Red lentils what you called is Masoor dal in our native place.It turns yellow after cooking.If you wanted it to be red .What chutney you made? You didn't mention .maybe tomato or red capscicum or red jalapeno would give you red concentrate or more paprika.Still yours is very nutritious perfect for winter.

We cheated, and used Major Gray's chutney...!
