An Easy One

.

 Because it's Hell's Sauna out there.


Seared Tuna with Thai Red Curry Sauce


It's hot outside.  

And we're without a refrigerator (more on that later). 


So dinner for Matt had to be something easy.

Earth Fare had yellowfin tuna on sale - bingo.

Alex made some peanut noodles, which paired nicely with this simple dish. I skipped the salad, because we do not have the means to store the ingredients!

But hey, he loved it.  And that's what matters.

Never Been My Favorite Day

.






These holidays are weird for me.

I've long since cut ties with my abusive parents, and my beloved Grandpa (the closest thing I had to a father figure) has been gone nineteen years. 

But Matt's a dad, and a pretty good one, at that.










So, today he got Carnitas Eggs Benedict with Chipotle Hollandaise for breakfast.

And tonight, he's grilling some lamb chops, and I've made tabouli and salted dulce de leche brownies

I may not have a dad of my own to celebrate (and there are so many out there like me, who find these holidays triggering), but I'm happy Alex does.

Continent-jumping for Father's day

 Smoked Salmon Involtini

Not everyone is lucky enough to have parents worth celebrating. Alex, fortunately, is.
 


 Matt is an amazing dad. I know how special that is. A special dinner for Father's day is my way of showing it.



 He loves salmon, & salmon is what he got. An appetizer of smoked salmon rolled around a mixture of guacamole & cream cheese, served on mini-toasts. A beautiful piece of wild Alaskan salmon, sprinkled with chili powder, ground chipotle & smoked paprika, cooked lightly then topped with what can best be described as a salsa cruda. A side dish of a slightly made-up fattoush.



And for dessert - Mexican Coke float.
